The Farm

Three generations on the same piece of land

Minas Café began in 1978, when the first Yellow Bourbon seedling went into the hillside that now gives its name to our highest lot. Nearly half a century later, the coffee is still picked by the same hands — and by the hands of the children and grandchildren of the people who started it.

We are not a commodity. Every plot is harvested separately, every lot is cupped before it leaves here, and every bag carries the date the cherry came off the tree. That care is the difference between a coffee and a coffee you remember.

Terroir

Where altitude turns into sweetness

Southern Minas gives coffee something no other place gives in quite the same way: cold nights, dry days and deep volcanic soil. The cherry ripens slowly — and that slowness is what concentrates the sugar.

Five steps, no shortcuts

Everyone says their coffee is craft. Here is exactly what happens between the plant and your grinder.

  1. 01

    Selective picking

Ripe cherry only, picked by hand, pass after pass. The green fruit stays on the tree for the next round.

  2. 02

    Sun drying

Raised beds, turned every hour, down to 11% moisture. No mechanical dryer, no rush.

  3. 03

    Resting in wood

Sixty days in wooden silos so the sugar stabilises and the acidity finds its body.

  4. 04

    Small-batch roasting

Fifteen kilos at a time, a profile drawn for each lot. Every roast is cupped before it is bagged.

  5. 05

    Dated packaging

One-way valve and the roast date printed on the bag. You know exactly how old your coffee is.

Our Coffees

Four lots. Four stories.

Each label comes from one specific plot of the farm. Same land, different altitudes — and cups that taste nothing alike.

We swapped our house bean for Reserva 1250 and the customer response was immediate. The sweetness carries the espresso with no sugar needed.
